There is nothing to keep.
Documents are made when they are needed, sent once, and deleted the moment they leave. If a printer is off, the job waits a day at most, then goes for good and is simply made again when you ask. See the Privacy Policy for exactly what is processed and why.
The helper app on your computer cannot be reached from the internet. It receives a locked, ready-to-print file and nothing else: no order history, no customer details.
Every shop is sealed off from every other one. Even in the worst case, nothing can reach beyond a single store, and never the documents themselves. Full detail in the security notes.
